Sodium erythorbate is derived from rice, obtained by microbial fermentation, and appears as white odorless crystalline or granules with good stability in the dry condition. However its water-solution state is easily mutated when meeting air, trace metal heat and light. Generally, sodium erythorbate is widely used into the food industry as one antioxidant to extend the shelf life, and keep the taste, the flavor, and the color of final food products without any toxic and side effects.
