Monosodium phosphate is one colorless column crystal, odorless, slightly deliquescence. The relative density is 2.04 and the melting point is 60℃. It is easily soluble in water but insoluble in ethanol. If heated below 100℃, it can dissolve in crystal water and convert to monohydrate salt. When heated to 100℃, it will lose crystal water and change to anhydrous substances, which will become sodium metaphosphate if continues to be heated.
Generally, monosodium phosphate is used as one leavening agent to roast foodstuffs to control the fermentation speed, shorten rehydration time, and avoid the stickiness & mushiness of noodles in the instant noodles processing industry. Besides, monosodium phosphate is used to lower the breakage, make the porous space in good order, and therefore lengthen the shelf life of crackers or cakes.
