Potassium sorbate is the potassium salt of sorbic acid, chemical formula CH3CH=CH−CH=CH−CO2K. It is a white salt that is very soluble in water (58.2% at 20 °C). With the abilities to prevent mold and microbes and to increase shelf life, potassium sprbate is primarily used as a food preservative in food products such as cheese, yogurt, baked foods, milkshakes, fruit drinks, soft drinks, dried meats,  and some fast-food served by McDonald's. Potassium sorbate can also found in herbal diatery supplements and dried fruits.
