What is Sodium Ascorbate?

Sodium ascorbate is white or yellow crystalline solid powder. It has good water solubility, 1g of sodium ascorbate can be dissolved in 2ml water. Sodium ascorbate has good stability when under dry condition,  but it will be slowly oxidized and decomposed when in aqueous solution or in the humid environment.
