Due to that maltitol crystal is 90% sweet of sucralose, its syrup status is 75% of sucrose, and it is with no off-flavors, no aftertaste, maltitol crystal primarily serves as a sugar substitute in sugar-free products and sugar/calorie reduction food categories such as candies, chewing gum, chocolates, ice cream and baked goods.
Besides, maltitol is freely soluble in water (100g/165g water), sparingly soluble in methanol, ethanol, and insoluble in organic solvents such as chloroform and ether.
